If you like delicate seafood risotto; this is Venice’s rarest version. The fish disappears but the taste stays forever.
The gò is a tiny lagoon fish. The broth is everything — they cook the fish, extract all the flavor, then discard it. What’s left is pure Venetian essence in a bowl.
