Clams, pasta and the clean flavor of the coast.
Pronunciation: PAH-sta A VON-go-le
OmnivoreGluten*
What it is
Spaghetti or linguine tossed with fresh clams, garlic, white wine, parsley, and olive oil
Taste translation
IIf you like seafood pasta, this is one of Italy’s purest versions — light, briny, garlicky, and full of sea flavor.
Zen's note
This is one of the great dishes of the Neapolitan coast. The real version is “in bianco” — no tomato, just garlic, white wine, and the juice of the clams. It tastes like the sea. Don’t add cheese. Ever.
